Stamsund teaterfestival: The Extreme Salad Man

Extreme Salad Man is a film about a plant-collector and his edible garden near Trondheim in Norway. Stephen Barstow has a life project to save and grow perennial plants so that he can eat a (mostly) vegetarian and biodiverse diet year round. With its cold climate and short growing season, many people assume that eating locally in Norway has to be meat-heavy. Stephen proves that with creativity and dedication, an abundant and delicious plant-based diet is possible, even in one of the more challenging growing climates on Earth. Shot over 2 years, the film explores taste, place and change and celebrates the joy in growing and eating recipes that contain more than 200 ingredients.

The film was supported by and shown at The National Museum of Norway as part of the New Nordic: Cuisine, Aesthetics and Place exhibition in 2025. A version of the exhibition was on display at the National Nordic Museum in Seattle, USA.Cathrine Kramer is an artist and member of Genomic Gastronomy, an art group that investigates the biotechnologies and biodiversity of human food systems through collaboration and humour. The studio’s mission is to map food controversies, prototype alternative culinary futures, and to imagine a more just, biodiverse and beautiful food system.Since 2010, Genomic Gastronomy has presented its research through installations, films, publications, performances and meals. Their work has taken place in Norway, across Europe, and in Asia and North America, collaborating with scientists, chefs, hackers and gardeners to understand how culture, ecology and technology shape what we eat.
